Make a Garden Salad

Dish up a colorful salad that is as attractive as it is healthy and tasty! Salads can be served with most every meal, or it can be served alone, with various protein ingredients added. All kinds of salads are good for health. Make it more colorful to appeal to both the young and the old. This garden salad is a riot of colors with a dash of green, yellow and red.

Boil half a cup of corn kernels in the microwave. Set aside.Mix 1 diced tomato, half a cup of diced cucumber,3 table spoons of diced pineapple and a few sprigs of diced coriander in a big bow. Wash half a cup of sprouted mung beans, drain the water and add to the bowl. Add 3 tablespoons of Pomegranate into the bowl. Mix the boiled corn along with all the other ingredients. Dress the salad. You can drizzle a dressing, add salt and pepper, or keep it simple with 1 teaspoon lemon juice. You can chill it or eat it as soon as it is prepared.

If you have an iron deficiency then add more of pomegranate as it is a good source of iron. Its also an antioxidant, good for people with a heart condition.
Tomatoes and sprouted beans are a good source of vitamin C. Your cold or cough may just vanish, because this salad has pineapples. Pineapple contains an enzyme called bromelain which has anti-inflammatory properties.
Corn has high fiber content and is good at lowering cholesterol levels in the body. Cool Off with the cucumber - also a good source of Vitamin C.
